These are words diners use to describe Il Bosco Pizza in Scottsdale, Arizona. This charming, 40-seat restaurant is located on a quiet road just northwest of the bustling intersection of Scottsdale Road & Shea Boulevard. Your senses will be awakened as you step inside and inhale the aroma of crusty artisanal pizza cooking in the 900 degree, hand-tiled Valoriani wood fired oven.
Using only the best, all-natural ingredients, Il Bosco’s pizzas are the very definition of mouthwatering. Every pizza is hand-made in an open kitchen and topped with a fresh assortment of imported cheeses, house-made sauces, and seasonal, local, organic veggies and meats.
Before lunch or dinner, share a plate of roasted seasonal vegetables with burrata cheese or a traditional Caprese salad with homemade pesto. To accompany your dining experience you’ll discover a select list of about a dozen wines available by the glass or bottle, beer on tap, and a refined selection of after-dinner drinks.
Dessert choices are creatively simple, from apple or blueberry pizza to lemon sorbetto, creme brulee; or try a homemade brownie warmed in the wood-fired oven in a small cast iron skillet, topped with Sweet Republic ice cream.
Il Bosco means “the forest” in Italian – a translation which might seem fitting given the name of Bill Forrest, owner of this perfect little pizza place. The name could also represent the oak wood that burns hot and clean for every pie. However, the history of Il Bosco Pizza also tells the tale of “seeing the forest through the trees.”
After an award winning career as a golf professional for 35 years in 47 countries (Forrest was named PGA of America Teacher of the Year in 2006), Bill Forrest became obsessed with his backyard pizza oven. He knew he could “take his act on the road,” so he began operating a mobile Valoriani pizza oven for catering gigs that spanned from 20 to 200 people. Once the recipes were perfected, he anchored his locally owned business and opened Il Bosco Pizza in the summer of 2012. Almost immediately, it became known for serving some of the best pizza in Arizona.
Bill Forrest is not trying to reinvent pizza; what he brings to his customers is his vision of fresh, organic pizza, in an atmosphere he would seek out to dine in another city, like New York’s Soho, San Francisco or even Italy!
Il Bosco recently extended the patio dining area and there are future plans for another location in the not too distant future. Will it be pizza? We’ll have to see what’s cooking next.
